Raw is Fashionable

The style of raw food  consists of much more than eating salads. I includes vegetables, fresh or dried fruits, seeds, nuts and legumes or finished cereals. With all these ingredients you can prepare really incredible and delicious dishes.

We’re going to try to explain in this post, what this style of eating consists of, why more and more people are turning to living food, what are the benefits and their culinary possibilities?

Raw food, or raw vegan, consists of consuming only food of plant origin. Excludes products of animal origin, but in addition are consumed uncooked, such as nature offer, to not alter its nutrients.

When you look for information on this subject you find that some people recommend incorporating dietary habits of “crude veganismo” but can be made proportions, for example 70% raw / 30% cooked; or 80/20. It’s better not to stress the body, changing habits is a process and before moving on to raw food you have to learn to cook the dishes trying not to fall into the extremes.

This type of food has interesting benefits, it reduces body weight, you’ll get more energy and vitality, a deeper and more restful sleep … These changes are usually because we leave behind a lot of processed foods, rich in saturated fats and sugars, our body has fewer toxins to eliminate and therefore less energy wastage.

It also provides more vitamins and phytochemicals since some are sensitive to heat and when cooking we destroy them, for example vitamins C, B1, B9 or E. They give more feeling of satisfaction because they contain all their water and will occupy more space in the stomach ; as to eating them we must make a greater effort to chew and we will then feel even more satisfied.

It has also been shown that when food is subjected to high temperatures, such as frying and baking, certain toxic substances are generated (heterocyclic amines, polycyclic aromatic hydrocarbons …) that may increase our risk of certain diseases, such as cancer.

In order not to give up foods such as cereals or legumes, these can be consumed in the form of sprouts, thus providing us with an essential aminoacid we need called methionine.

The truth is that it is not difficult to increase the intake of “crude” in our daily diet, without giving up cooked foods but reducing them, for example a breakfast and a dinner with crude and eat some fruit during the morning.  And you will be surprised how simple it is to cook exquisite dishes (even sweets !!) with 100% raw ingredients.

We enclose the recipe of a treat of 100% Raw zucchini that will surprise you and encourage you to explore and investigate and to create your own transformation towards a healthier life.

Tartar of Zucchini.

 Ingredients:

1 medium zucchini.

1 tomato

1 carrot

10 black olives

10 capers

1 tablespoon sunflower seeds

Juice of a lemon

Fresh basil

Oil

Salt

Preparation:

Grate the zucchini and the carrot with a coarse grater.

Cut the tomato into cubes.

De-stone the olives and cut them small, also the capers.

Mix all the ingredients with the lemon juice, oil, pinch of salt and the finely chopped fresh basil for about 15 min.

Finally add the sunflower seeds and mix.

Pour into a cylindrical mold and serve.
