Recipe of the Week. Nutella Bread Pudding… Oh My!!!

Today 5th February is apparently THE Nutella Day of the year

I was going to make it but could not trust myself on this one, having still not got rid of the extra Christmas poundage since 2015!

Ready in 1 hour

Serves 6 ( unless you are alone for 24 hours 😉 )

Calories…. hahahaha… Yes it maybe has a few!

INGREDIENTS

  • 12 slices brioche bread or 12 slices ready cut white bread, at least 1 day old
  • 350 gms Nutella
  • 450 ml light cream
  • 1/2 tsp. salt
  • 5 ml. vanilla extract
  • 200 gms sugar
  • 3 large eggs

DIRECTIONS

  1. Preheat the oven to 180°C. Grease an 8-inch square baking dish with a little butter.
  2. Make 6 sandwiches with the bread and Nutella. (lightly toast the bread for easier spreading if you prefer) 
  3. Cut each sandwich into 6 to 8 pieces. Pile the sandwich pieces into the prepared baking dish.
  4. In a small saucepan, combine the cream, salt, and vanilla and cook over medium heat until warm.
  5. In a large bowl, whisk together the sugar and eggs. Slowly add the cream mixture, stirring constantly to make sure the eggs do not cook.
  6. Pour the mixture over the bread and cover the dish with aluminum foil.
  7. Bake on the centre rack of the oven for 30 to 40 minutes, removing the foil after about 20 minutes. The finished pudding will be golden brown on top.
  8. Allow the pudding to rest for at least ten minutes before serving. ( That’s a challenge!!)
  9. Add ice cream just for the hell of it.  😉
